What do you do when you’re in the mood for some brownies, but you don’t have any mix on hand? You know that box of chocolate cake mix that’s starting to collect dust in the back of the cupboard? Bet you didn’t know you could convert it into cheesecake brownies. Give it a shot. You’ll be amazed at how easy it is to transform regular cake mix into a rich dessert that seems way more complex than it is.
- 1 box of chocolate cake mix
- 1 stick of melted butter or margarine
- 2 large eggs
- 1 3/4 cups confectioner’s sugar
- 1 8 oz. package of cream cheese
Preheat oven to 350 degrees.
In a medium sized bowl, mix together the cake mix, melted butter, and 1 large egg. The mixture should form a soft dough.
Press the dough into a greased 13″ x 9″ pan. It’s easiest if you use your fingers for this step. At this stage the dough is like a chocolate-scented play-doh, so this would be a great place for kids to help out.
In a small bowl, mix together the confectioner’s sugar, cream cheese and 1 egg. Spread the cream cheese mixture over top of the dough with a spatula.
Bake for 25 minutes or until the cheesecake mixture is lightly browned. Cool in freezer for at least 20 minutes before cutting into 16 squares.
Enjoy! These are so easy, so tasty, and they look like they were super complicated to make. If there’s a better way to use up that boxed cake mix, I can’t think of it.
